Two Salads from Susie Trepagnier:
Couscous Salad
1 box couscous cooked according to package directions
At least 8 ounces of spinach cooked, drained, and squeezed
4-6 ounces feta cheese
Good handful chopped basil
Dressing:
Mince 2-3 garlic cloves
Squeeze 2 - 3 lemons
Add about 1/4 C olive oil
Salt and pepper to taste
Add couscous, spinach and basil together.
Combine with dressing and add feta.
This is great as a side with fish or chicken and also can be used as a stuffing for red or green peppers.
Garbanzo Bean Salad
1/2 C. Olive Oil
Salt and pepper to taste
1/3 Red Wine Vinegar
6 C Cooked garbanzo beans (can use canned)
3 Cloves garlic
½ c Chopped cilantro, parsley, or basil
1 t. sugar (optional)
4 Slices red onion
Combine ingredients for dressing and pour over garbanzo beans. Squeeze fresh lemon to taste. Great with brown rice.
